Quinoa, pronounced KEEN-wah, is an excellent replacement for rice, not only with twice the amount of protein and more fibre. It is high in iron, magnesium and beneficial to metabolic health as well as being gluten-free, making it a great addition to salads!

 

Here is a recipe that I enjoy making!

 

Ingredients:

  • Goats fetta
  • Grapes sliced
  • Rocket
  • Roasted slithered almonds
  • Dark and light quinoa soaked overnight and pressure cooked to remove lectins ( see our lectin post )
  • Sliced spring onions
  • Cranberries or pomegranate seeds ( depends on the season )
  • Chervil

 

Combine together.

Add dressing (olive oil, white balsamic, salt and pepper )

 

Super quick and easy.
