Ingredients:
- 1 cup cooked beans (black beans, lentils, etc.)
- 1 can diced tomatoes
- 1–2 cups leftover veggies (carrots, zucchini, kale, etc.)
- 4 cups vegetable broth
- 1 tablespoon olive oil
- 1–2 cloves garlic, minced
- 2 inch ginger, grated
- 1 teaspoon dried thyme or rosemary
- Salt and pepper to taste
Instructions:
- Heat olive oil in a pot. Add garlic and ginger, sauté for 1–2 minutes.
- Add tomatoes, veggies, beans, and broth. Stir, bring to a simmer.
- Season with herbs, salt, and pepper. Simmer for 20–30 minutes.
- Taste and adjust seasoning as needed. Serve hot.
