I was absolutely ravenous the other day and soured my cupboards for a very healthy but quick solution!

 

These were the ingredients I put together

1 can of chickpeas

Coriander – chopped

Red onion – finely chopped

Mix together

Now for the flavouring

 

Melt 1 tablespoon of ghee ( you may replace with olive oil) and heat

Add 1 tsp of mustard seed to the hot ghee and wait till the seed crackles

Then quickly add 1 tsp of ground cumin and ground coriander.

Swirl it in the ghee and add to your salad.

I swear this process took me 5 mins all up.
