I am loving the flavour of basmati rice right now.

I found another great recipe which is so easy to do on the stove.

Normally I am a fan of the rice cooker however I have noticed that cooking rice on the stove makes the rice a lot fluffier!

Perhaps it is time to upgrade my rice cooker.

I did not include barberries into the recipe as it was difficult to get however it still was absolutely delicious.

You could replace the pistachio for pine nuts or hazelnuts or almonds roasted.



40g unsalted butter360g basmati rice, rinsed under cold water and drained560ml boiling waterSalt and freshly ground white pepper1 tsp saffron threads, soaked for 30 minutes in 3 tbsp boiling water40g dried barberries, soaked for a few minutes in freshly boiled water with a pinch of sugar30g dill, roughly chopped20g chervil, roughly chopped10g tarragon, roughly chopped60g slivered or crushed unsalted pistachios, lightly toasted
