According to Dr Gundry, the guru of the lectin free diet which assist with autoimmune disease and joint pain, sweet potato is a vegetable that you can always eat.

Here is a great recipe which I am addicted to.


Peel the sweet potato, cut it in half and add the following ingredients

A dash of Olive oil

2cm slice of butter

1/4 tsp of Turmeric

Salt and pepper

Roast in the oven at 180 degrees for 45 mins to one hour. Take it out of the foil when soft. Add toasted Pine nuts and a squeeze of lemon over the top of it. Add salt and pepper to taste if required.
